Sourdough Discard Sweet Potato Bread

Directions:

If using yeast, dissolve it in the warm water with maple syrup/honey & let stand until frothy, about 5 minutes. In a large bowl, combine flour, salt, sourdough discard, olive oil, & mashed sweet potato. Add the yeast mixture or just the warm water & maple syrup/honey if not using yeast. Mix until a dough forms.Turn the dough out onto a floured surface & knead for 10 minutes, until smooth & elastic. The sweet potato will make the dough slightly sticky; add a little more flour if necessary, but try to keep it moist.Place the dough in a greased bowl, cover with a damp cloth, & let it rise in a warm place for 1-2 hours, or until doubled in size.Preheat the oven to 375°F (190°C). Gently punch down the dough to release air bubbles, then shape it into a loaf. Place it in a greased 9x5in loaf pan.Bake for 50 minutes, or until the bread is golden brown & sounds hollow when tapped on the bottom.Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool. Ingredients:

2 ½ cups all-purpose flour

1 cup cooked and mashed sweet potato (about 1 medium sweet potato)

1 cup sourdough discard

¾ cup warm water

1 teaspoon salt

2 tablespoons maple syrup or honey (maple syrup for VGO)

2 tablespoons olive oil

1 teaspoon active dry yeast (optional, for a quicker rise)

Servings: 1 loaf

Prep Time: 20 minutes (plus overnight rest for the dough)

Cook Time: 45-50 minutes

Total Time: About 2 hours 10 minutes to 2 hours 30 minutes
